Steps to Make Your Napolitan

  1. Cook the Spaghetti
    • Bring a large pot of water to a boil. Add 1% salt (10g salt per 1 liter of water).
    • Cook the spaghetti according to the package instructions, reducing the cooking time by 1-2 minutes for al dente. Reserve some pasta water and drain the rest.
  2. Sauté the Vegetables
    • Heat olive oil in a frying pan over medium heat. Add the sliced onion and sauté until softened.
    • Add the ham strips and cook briefly, followed by the mushrooms. Sauté until the mushrooms soften.
    • Add the green bell pepper and sauté for another 1-2 minutes.
  3. Prepare the Sauce
    • Add tomato ketchup to the pan and mix well to coat all the ingredients.
    • Stir in 2 tbsp of the reserved pasta cooking water to thin the sauce. Adjust seasoning with additional pasta water (if too salty, add a bit of plain water).
  4. Combine Spaghetti and Sauce
    • Turn off the heat. Add the cooked spaghetti to the pan and toss to coat evenly with the sauce.
    • Sprinkle Parmesan cheese over the pasta and mix well.
  5. Add the Finishing Touch
    • Add butter and toss until melted and evenly incorporated. This step adds richness and shine to the pasta.
  6. Serve
    • Transfer the pasta to serving plates. Garnish with additional Parmesan cheese if desired.

Cooking Tips

  • Ketchup Flavor: The sweetness of ketchup is a signature of Napolitan pasta. If you’d like more tanginess, add a teaspoon of Worcestershire sauce.
  • Cooking Heat: Avoid overheating the pan when combining spaghetti and sauce to maintain the sauce’s consistency.
  • Optional Additions: Add a pinch of black pepper or chili flakes for an extra kick.

Enjoy your nostalgic and comforting Japanese Napolitan pasta!
